hand over the coals where the food will be and count, "One thousand one, =
one thousand two..." If you have to move your hand away after 2 seconds, t=
he coals are hot; 3 seconds, medium-hot; 4 seconds, medium; 5 seconds, med=

[IMAGE] 1 2- to 3-pound fresh or frozen turkey breast portion, thawed =
2 teaspoons ground coriander 1/2 teaspoon onion powder 1/4 teaspoon=
chili powder Dash ground red pepper 1 tablespoon margarine=
1 tablespoon lemon juice =09=09

1. Remove skin and excess fat from turkey breast. In a small saucepan=
cook coriander, onion powder, chili powder, and red pepper in margarine f=
or 1 minute. Remove from heat and stir in lemon juice. Spread spice mixtur=
e on all sides of turkey. 2. In a covered grill arrange medium-hot co=
als around a drip pan. Test for medium heat above the pan. Insert a meat t=
hermometer into the thickest part of turkey breast, but not touching the b=
one (if present). Place turkey breast on grill rack over drip pan but not =
over coals. Lower grill hood. Grill 1-1/4 to 1-3/4 hours or until thermome=
ter registers 170 degrees F. Add more coals as needed. Makes 8 servings. =
