WONDERIN' WHAT TO DO WITH THE LEFTOVER TURKEY?... Bored with the same old leftover-turkey-day-after Thanksgiving meal? Then try something new! Spicy Turkey Chili (6 servings at 1 cup each) 2 onions, chopped 2 garlic cloves, minced ? c green pepper, chopped 1 T olive oil 1 lb. diced turkey meat (cooked) 2 c pinto or kidney beans 2 c canned tomatoes, with liquid 1 cup low-sodium chicken broth 2 T chili powder 2 t cumin Fresh Ground pepper In large saucepan, saute onion, garlic and green pepper in olive oil for 10 minutes. Add diced turkey and stir until seasoned. Add remaining ingredients, bring to a boil, lower heat and then simmer, uncovered, for 30 minutes. Add additional chili powder if you like your chili extra spicy. Per serving: 1 ?
