Here is the recipe for the demi-glace:
1.5 liter of port 2 cups brandy Reduce 2 cups white raisins 1 cup black raisins 4 oz green peppercorns (drain juice) add demi-glace (I bought the prepared kind at Central Market), add by spoonful until you get the right consistency reduce to sauce consistency reduce red wine vinegar and honey to taste Enjoy!
